Potato soup is an unphenomenal white color, and that doesn’t change too much, but after six and a half minutes, I could tell that the starches had gelatinized and the soup became thick, more opaque, and creamy.

No raw potato flavor lurking in the corners, either. I’ve already told you that I’m obsessed with making hot soup in this machine, and so far I have not seen a function that the Vitamix can’t accomplish well.
